Hario Switch
Ryan Wibawa's Hario Switch recipe, World Brewers Cup 2024 (3rd place)
Ryan Wibawa, Indonesian Brewers Cup champion in 2016 and 2024, placed 3rd at the 2024 World Brewers Cup in Chicago with the Hario Switch. He calls his recipe a double immersion: two steeps, with the temperature going up. With 15 g of coffee, the valve is closed and 100 g of water at 86°C goes in to rest for 40 seconds before the valve opens. Then the valve closes again, 120 g of water at 92°C is added, and the valve opens at 1:05. That makes 220 g of coffee, and the recipe is easy to repeat at home with one Switch and one kettle.
