Hario Switch
Bayu Prawiro's Hario Switch recipe, World Brewers Cup 2025 (2nd place)
Bayu Prawiro, an Indonesian barista, placed 2nd at the 2025 World Brewers Cup, held that year in Jakarta. His Hario Switch recipe uses 15 g of coffee and 220 g of water, and combines two ways of brewing in one cup. The bloom runs with the valve open at 93°C; then the valve closes and the rest of the water goes in at 88°C to steep, before the valve opens again. The drop in temperature mid-brew is what defines it, so have a kettle you can set, or let the water cool a little.
