Learn to taste coffee through the CVA approach.
A 2-hour beginner-friendly sensory workshop inspired by the Coffee Value Assessment (CVA) approach, designed to help you understand how to evaluate and describe coffee through your own senses.
You’ll be guided through aroma, taste, acidity, sweetness, mouthfeel, aftertaste, and overall impression using a structured sensory evaluation process. Through side-by-side coffee tasting, you’ll learn how to notice differences between coffees and communicate what you experience using familiar sensory references.
This is not about guessing the “correct” tasting notes. It’s about learning how to observe, compare, and describe coffee with confidence.
What you’ll learn
- Introduction to coffee sensory evaluation
- The 5 basic tastes and how they relate to coffee
- Aroma and sensory memory
- Sweetness, acidity, body and aftertaste
- How to compare two coffees side by side
- How to describe coffee using familiar references
- How to use a simplified CVA-inspired sensory evaluation form
- How to develop your own sensory vocabulary
What you’ll experience
Smell → Taste → Feel → Describe → Compare
You’ll taste different coffees through guided exercises and complete your own sensory evaluation throughout the session.
